We all know about the health benefits of Spinach. Here we have a Salad which can be prepared in under 15 minutes. Add some boiled eggs to add the protein quotient.

- Spinach 200 gm
- Tomato 50 gm
- Eggs 1 no
- Onion 1 medium
- Sesame seed 10 gm
- Garlic pods 3pc
- Honey 1tbsp.
- Mustard Powder ½ tsp.
- Lemon Juice 1 tbsp.
- Salad Oil 3-4 tbsp.
Directions:
Wash the spinach nicely and put in strainer to drain.

Cut the tomatoes lengthwise discarding seeds, cut slices of onion.

Brown the sesame seed in a pan.
⇩
Slice the garlic and fry in oil, drain and keep aside.
⇩
Boil the eggs.
⇩
Take all the ingredients of vinaigrette in a bowl except oil and mix properly. Now start whisking in oil little at a time to make a smooth emulsion.

Sweat the onions in a pan.
⇩
Mix together spinach, tomato, onions in a bowl with vinaigrette dressing.
⇩
Place in a plate, put around egg slice, and sprinkle the sesame seed, top with few garlic flakes.

Spoon a generous amount of dressing and serve.
