In French, Dame Blanche refers to a white lady and in culinary term it generally refers to a dessert made of ice cream and whipped cream. To make the Veloute Dame Blanche the chicken quenelles were made as airy and light as possible like the whipped cream. Hence the dish was name Veloute Dame Blanche.

Fried Chicken with Pepper Sauce: Boneless chicken pieces were seasoned with Worcestershire sauce, mustard paste and paprika with fresh fennel leaves. Turn the oven to 375 degrees. a mixture of salt, pepper, rosemary and thyme. In a large pot, heat 1 tablespoon of olive oil and butter over medium heat. Sprinkle half of the spice mixture over the chicken breasts. Put the chicken in a skillet. Fry until golden brown 2-3 minutes per side. Take it out, and set it aside. Add wine to the pan; stir in honey for 2-3 minutes, then stir to loosen the browned bits. The chicken were then rolled with bread crumbs and fried to a golden brown colour. The chicken was served with red wine pepper sauce known as “Devil Sauce”.

Veloute Dame Blanche

Dame Blanche refers to white women. In culinary terms, it usually refers to desserts made from ice cream and whipped cream. To make the “Veloute Dame Blanche” the chicken quenelles were made as light and airy as possible, like whipped cream. This dish is called Veloute Dame Blanche.Fried Chicken with Pepper Sauce was served with honey glazed carrots and leafy salad made of garden fresh spinach and tomatoes with a drizzle of virgin olive oil.
