Chicken is the most common non vegetarian item eaten by people across India. People across all ages love to eat chicken either with bone or boneless. Culinary Arts Chef Anjani Nandan of Inspiria Knowledge Campus along with his students experimented with chicken and made poached chicken breast with potato grits and chilly orange sauce.

Grits are ground corn which is a common item at the breakfast table in Southern America. Here we have replaced the corn with new potatoes, to have a nice creamy texture. Poaching

Poached Chicken Breast with Potato Grits and Chili Orange Sauce

Ingredients Quantity


  • Boneless Chicken Breast 2 pcs
  • Salt 1 teaspoon
  • Crushed Black Pepper 1 teaspoon


  • Potato 100 gm
  • Milk 500ml
  • Butter 1 tbsp
  • Turmeric ½ teaspoon
  • Tabasco

  • Butter 1 tbsp
  • Cilantro Chopped 1 tablespoon
  • Crushed Garlic 3 flakes


  • Real Orange Juice 200 ml
  • Sugar 1 tbsp
  • Butter 1 tbsp
  • Red Chili Flakes 1 teaspoon
  • Lemon Juice 1 teaspoon
  • Paprika powder a pinch


Compound Butter- Blend together garlic, butter and chopped cilantro and put in refrigerator.

Debone the chicken, place on clean wrap and beat with tenderizer to have a uniform thickness.

Sprinkle with salt and pepper. Put the compound butter over the breast. Roll the clean wrap tightly around the chicken, tie the edges.

Poach the chicken breast for 20 minutes.

Orange Chili Reduction-mix together all the ingredients in pan other than butter and reduce by half. Take away from heat and whisk in the butter.

Potato Grits-Wash the potatoes, shred it. Add all ingredients and cook till soft and creamy. Adjust seasoning. You can add any cheese if desired at this stage.

Take out the poached chicken, cut the wrap and keep the juices. Cut it in slices.

Plating- Put a spoon full of grits on plate. Arrange the chicken breast on top. Pour the chili orange sauce around.

Serve Hot.

After making the Poached chicken breast with potato graits and chili sauce which was extremely delicious and juicy to taste. All at Inspiria Knowledge Campus who got a chance to lay their hands on the Poached chicken couldn’t stop raving about it. It left a sweet taste in their mouths leaving them asking for more.
