Poached Chicken Breast with Potato Grits and Chili Orange Sauce

CHICKEN
Boneless Chicken Breast 2 pcs
Salt 1 teaspoon
Crushed Black Pepper 1 teaspoon
GRITS
Potato 100 gm
- Milk 500ml
- Butter 1 tbsp
- Turmeric ½ teaspoon
- Tabasco

COMPOUND BUTTER

- Butter 1 tbsp
- Cilantro Chopped 1 tablespoon
- Crushed Garlic 3 flakes

CHILI ORANGE

- Real Orange Juice 200 ml
- Sugar 1 tbsp
- Butter 1 tbsp
- Red Chili Flakes 1 teaspoon
- Lemon Juice 1 teaspoon
- Paprika powder a pinch

Method
Compound Butter- Blend together garlic, butter and chopped cilantro and put in refrigerator.

Debone the chicken, place on clean wrap and beat with tenderizer to have a uniform thickness.

Sprinkle with salt and pepper. Put the compound butter over the breast. Roll the clean wrap tightly around the chicken, tie the edges.

Poach the chicken breast for 20 minutes.

Orange Chili Reduction-mix together all the ingredients in pan other than butter and reduce by half. Take away from heat and whisk in the butter.

Potato Grits-Wash the potatoes, shred it. Add all ingredients and cook till soft and creamy. Adjust seasoning. You can add any cheese if desired at this stage.

Take out the poached chicken, cut the wrap and keep the juices. Cut it in slices.

Plating- Put a spoon full of grits on plate. Arrange the chicken breast on top. Pour the chili orange sauce around.
